Sugar-Glazed Pumpkin Seeds

I recently took a field trip to the “Corn Field Maze” with my son’s class at school.  We picked out a couple of fresh pumpkins from the vine and brought them home.  I thought I would try my hand at roasting the seeds.  They were fantastic!  I thought… if traditional roasted seeds are this good, I wonder how good glazed seeds would be.  Oh, man… they were soooo good and SUPER Simple!

Here’s how to get your perfect Sugar-Glazed Pumpkin Seeds.

Ingredients:

Pumpkin Seeds, sorted and cleaned of pulp
1 tablespoon Melted Butter
1/4 cup Brown Sugar
1/4 cup White Sugar
4 cups water

Instructions:

1.  Bring Water to boil in a medium size pot
2. Add White Sugar and Pumpkin Seeds and simmer for 10 minutes
3.  Preheat oven to 350 degrees
4. After 10 minutes, drain pumpkin seeds and blot with a towel
5.  Place Pumpkin Seeds on a baking sheet in a single layer
6.  Drizzle with Melted Butter and top with Brown Sugar
7.  Bake for 10 to 12 minutes or until seeds are cooked through.  **Hint** The insides of the pumpkin seeds will cook faster than the shells.  Be sure to check them periodically while cooking to ensure that you do not burn the seeds. 
8.  Allow to cool – this helps the shells to crisp
9.  Enjoy!
