Creamy Corn Recipe!
When I’m cooking dinner for my family, I often look for side dishes that are super simple to make. This cuts my meal prep time down and also allows me to spend more time focusing on the main course. I was running low on ideas one night and decided to throw together some creamy corn. It was a HUGE hit in my house! The kids loved it and ate every bite and my husband was asking for more… after the pot had run dry! Lol.
If you have plans to make this one, I would suggest that you make a little more than you thought you would need. Here’s how to make it. You will not believe how incredibly easy this dish is!
Creamy Corn Recipe
Ingredients:
1 Bag Frozen or Fresh Corn Off the Cob
8 oz Cream Cheese
1/4 to 1/2 Cup Heavy Whipping Cream
Butter, Salt and Pepper to taste
1. Heat corn in a small to medium pot on the cooktop on medium-low heat **Tip – if you are using fresh corn off the cob, you may need to add a small amount of water.
2. Once warm, add cream cheese and allow to melt
3. Add heavy whipping cream and stir thoroughly. **Tip – Heavy whipping cream does not like high heat. Be sure to keep your stove on medium-low heat and stir often
4. Continue until the corn has been cooked through to your taste. It takes mine about 5 to 7 minutes to heat through.
5. Add butter, salt and pepper to taste
That’s it! So simple, right? You can spice it up with some Rotel, Diced Green Chile Peppers or even Red Pepper Flakes. You could give season it with a little Garlic or Cayenne Pepper. I topped one bowl with mozzarella cheese, but my family liked it better without it. YUM!
